Simple Sustenance

When was the last time you ate a dinner that was so good you couldn’t stop smiling? I had one of those precious meals last weekend at The Hil (no, I didn’t misspell it). The meal in question? Simple sustenance. A veggie plate: farm-fresh greens cooked in a ton of butter with browned potato croquettes (a.k.a more butter). The appetizer? Meat, cheese, pickled vegetables and rosemary bread. Jason’s dinner? Roast chicken and mashed potatoes with gravy. That’s it. No coq au vin, offals or truffles here. Just those regular, every day things you can make at home, except for you couldn’t possibly. Not this good.

Nestled away in the Serenbe Community, a place so secluded that most of the locals I spoke with thought I was joking when I said people vacationed at the gorgeous inn. "What inn?" they asked. In the sunny dining room full of light and wooden accents, it was hard to feel like we weren't on vacation, though we were only staying the night. No one rushed us while we ate, and though there was music and conversation, I didn’t notice it. Instead I took my time and tried not to worry about all the stuff that usually gets in the way of dinner—work, the future, friends, family, relationships, the news, blah, blah, blah. Instead, I thought about broccoli, the cool prosecco and the person in front of me.
