Pumpkin pie, pumpkin muffins, pumpkin bread, pumpkin seeds. I'm actually a roasted, salted pumpkin-seed-aholic except that as healthy as they are, and loaded with what my brain craves (magnesium, tryptophan) they are high in fat.
Do you like pumpkin?
Have you ever chopped up pumpkin and roasted it? I'm thinking about doing it this year when we carve my daughter's pumpkin, usually I just pull out the seeds. I imagine it tastes similiar to sweet potato but less sweet?
Famous as the annual Jack-o-lantern and Thanksgiving pie tradition, pumpkin is a low fat (the pumpkin fruit/meat), low calorie, high in fiber food that offers a variety of health benefits.

Pumpkin is divine! You can do
Pumpkin is divine! You can do with it what you would with any squash; it tastes great roasted and served with rice or couscous, and makes a great soup. When you add cumin, cilantro, cayenne, or coriander, the sweetness is tempered. I love fall!!

I bet it is. I plan to give it a shot this year as I've always just carved our pumpkin and roasted the seeds. But I'm really into the squashes now and after researching pumpkin, the health benefits are phenomenal.
